  • 1 pound chicken breasts, cut into bite-sized pieces
  • 1 can coconut milk
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen peas

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken pieces and season with garlic powder, onion powder, salt, and black pepper. Cook until browned.
  2. Add rice to the pot and stir to coat.
  3. Pour in the coconut milk and chicken broth, bring to a boil.
