Coconut Chicken Rice Bowl

A delightful and comforting coconut chicken rice bowl that’s easy to prepare at home.

Ingredients

  • 1 cup jasmine rice
  • 2 cups coconut milk
  • 1 pound chicken thighs, boneless and skinless
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 1 tablespoon lime juice
  • 1 teaspoon brown sugar
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a pot, combine rice and coconut milk, bring to a boil.
  3. Reduce heat, cover and simmer for 15 minutes or until rice is tender.
  4. In a bowl, mix chicken with soy sauce, fish sauce, garlic, ginger, lime juice, and brown sugar.
  5. Heat a skillet over medium-high heat and cook chicken until golden and cooked through, about 5-7 minutes.
  6. Serve chicken over coconut rice and garnish with cilantro and lime wedges.

Notes

  • For extra flavor, marinate the chicken for 30 minutes before cooking.
  • Substituting brown rice can increase cooking time, so adjust accordingly.
