Coconut Chicken Rice Bowl

This Coconut Chicken Rice Bowl is a comforting dish that combines tender chicken, fragrant coconut milk, and fluffy rice.

  • 2 cups jasmine rice
  • 1 pound chicken thighs, boneless and skinless
  • 1 can coconut milk
  • 1 cup chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon ginger, grated
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 1 tablespoon green onions, chopped

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a large pot, combine the rice, coconut milk, chicken broth, soy sauce, ginger, garlic, and sesame oil.
  3. Bring to a boil over medium heat, then reduce heat to low and cover.
  4. Cook for 15-20 minutes or until the rice is tender and the liquid is absorbed.
  5. While the rice is cooking, season the chicken thighs with salt and pepper.
  6. In a skillet, cook the chicken over medium-high heat until browned and cooked through, about 6-8 minutes per side.
  7. Remove from heat and slice the chicken.
  8. Fluff the rice with a fork and serve in bowls topped with sliced chicken and garnish with green onions.

Notes

  • For extra flavor, marinate the chicken in soy sauce and ginger for at least 30 minutes before cooking.
