Coconut Chicken Rice Bowl

A delicious and easy-to-make Coconut Chicken Rice Bowl that serves as a perfect weeknight meal.

Ingredients

  • 1 cup jasmine rice
  • 1 pound chicken breast, diced
  • 1 can coconut milk
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup diced vegetables (carrots, bell peppers, peas)
  • 2 green onions, chopped

Instructions

  1. In a pot, add jasmine rice and coconut milk. Bring to a boil.
  2. Reduce heat, cover, and simmer for 15 minutes.
  3. In a pan, heat olive oil over medium heat.
  4. Add garlic, ginger, and diced chicken; cook until chicken is browned.
  5. Stir in soy sauce, salt, and pepper.
  6. Add diced vegetables and cook for another 5 minutes.
  7. Fluff the rice and serve topped with chicken and vegetables, garnished with green onions.

Notes

  • For added flavor, let the chicken marinate in soy sauce for 30 minutes before cooking.
  • Substitute any vegetables based on your preference.
