- 1 cup jasmine rice
- 1 pound chicken breast, diced
- 1 can coconut milk
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup diced vegetables (carrots, bell peppers, peas)
- 2 green onions, chopped
- In a pot, add jasmine rice and coconut milk. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a pan, heat olive oil over medium heat.
- Add garlic, ginger, and diced chicken; cook until chicken is browned.
- Stir in soy sauce, salt, and pepper.
- Add diced vegetables and cook for another 5 minutes.
