- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- ½ cup brown sugar, packed
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup milk
- 2 tablespoons ground cinnamon
- ½ cup cream cheese, softened
- 2 cups powdered sugar
- 2 tablespoons milk (for frosting)
- Preheat your oven to 350°F (175°C) and line a cupcake tray with liners.
- In a large bowl, mix together the flour, granulated sugar, brown sugar, baking powder, and salt.
- Add the melted butter, eggs, vanilla extract, and milk, and stir until just combined.
- In a small bowl, combine the brown sugar and cinnamon for the filling.
- Fill cupcake liners halfway with batter, sprinkle a teaspoon of the cinnamon filling mixture, and then top with more batter to fill the liners about 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- While cupcakes are cooling, beat together the softened cream cheese, powdered sugar, and 2 tablespoons of milk to make the frosting.
- Once cooled, frost the cupcakes generously with the cream cheese frosting.
