  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 2 tablespoons ground cinnamon
  • ½ cup cream cheese, softened
  • 2 cups powdered sugar
  • 2 tablespoons milk (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tray with liners.
  2. In a large bowl, mix together the flour, granulated sugar, brown sugar, baking powder, and salt.
  3. Add the melted butter, eggs, vanilla extract, and milk, and stir until just combined.
  4. In a small bowl, combine the brown sugar and cinnamon for the filling.
  5. Fill cupcake liners halfway with batter, sprinkle a teaspoon of the cinnamon filling mixture, and then top with more batter to fill the liners about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. While cupcakes are cooling, beat together the softened cream cheese, powdered sugar, and 2 tablespoons of milk to make the frosting.
  8. Once cooled, frost the cupcakes generously with the cream cheese frosting.

Notes

  • Make sure not to overmix the batter.
  • These cupcakes can be stored in the refrigerator for an even fluffier texture the next day!
