Ingredients

  • 1 egg
  • 1 tsp vanilla extract
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt.
  3. Add milk, vegetable oil, egg, and vanilla extract to the dry ingredients, mixing until just combined.
  4. Fold in walnuts if using.
  5. Pour batter into cupcake liners, filling them about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool before serving.

Notes

  • These cupcakes can be topped with cream cheese frosting for added sweetness.
