Chocolate-Dipped Coconut Macaroons

  • 2 cups shredded coconut
  • 1 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/4 teaspoon salt
  • 8 ounces semisweet chocolate

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a bowl, mix together shredded coconut, sweetened condensed milk, vanilla extract, almond extract, and salt until well combined.
  3. Using a cookie scoop, place mounds of the mixture onto a baking sheet lined with parchment paper.
  4. Bake for 20-25 minutes or until golden brown.
  5. Let cool completely on the baking sheet.
  6. Melt the semisweet chocolate in a microwave or double boiler.
  7. Dip the cooled macaroons into the chocolate and place them back on the parchment paper to set.

Notes

  • Make sure the macaroons are completely cool before dipping in chocolate.
