  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 cup heavy cream
  • 1 cup granulated sugar (for caramel)
  • 1/2 cup light corn syrup
  • 1/4 cup unsalted butter (for caramel)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt
  • 8 ounces semisweet chocolate, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, cocoa powder, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy.
  4. Add the egg and mix until incorporated.
  5. Slowly add the flour mixture to the wet ingredients and mix until a dough forms.
  6. Press the dough into tart pans and bake for 15 minutes.
  7. In a saucepan, combine sugar, corn syrup, and butter for the caramel. Cook until golden brown.
  8. Remove from heat and stir in cream, vanilla, and sea salt.
  9. Pour the caramel into the baked tarts.
  10. Melt the chocolate and pour over the caramel layer.
  11. Let cool before serving.
