- 2 cups grated zucchini
- 1 pound ground chicken
- 1/2 cup breadcrumbs
- 1 large egg
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 2 tablespoons olive oil
- In a bowl, combine grated zucchini and salt. Let it sit for 10 minutes, then squeeze out excess moisture.
- In a large mixing bowl, combine the zucchini, ground chicken, breadcrumbs, egg, Parmesan, garlic, pepper, and oregano. Mix well.
- Form the mixture into patties.
