  • 2 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 4 hoagie rolls
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix breadcrumbs, Parmesan cheese, and Italian seasoning.
  3. Coat chicken breasts in olive oil and then in the breadcrumb mixture.
  4. Place coated chicken on a baking sheet and bake for 25-30 minutes until cooked through.
  5. In a separate saucepan, heat the marinara sauce over medium heat.
  6. Once the chicken is cooked, add marinara sauce over each piece and top with mozzarella cheese.
  7. Return to the oven until the cheese is melted and bubbly.
  8. Toast hoagie rolls and then assemble the sandwiches with chicken, extra marinara, and more cheese if desired.
  9. Serve and enjoy!

Notes

  • For extra crunch, you can double coat the chicken in breadcrumbs.
  • Feel free to add your favorite toppings like fresh basil or red pepper flakes.
