- 2 cups cooked, shredded chicken
- 1 can enchilada sauce
- 1 cup black beans
- 1 cup corn
- 1 cup diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 2 cups shredded cheese
- 8 small flour tortillas
- In a large bowl, combine chicken, enchilada sauce, black beans, corn, diced tomatoes, cumin, and chili powder.
- Layer the bottom of the crock pot with tortillas, followed by the chicken mixture and a sprinkle of cheese.
- Repeat the layers until all ingredients are used, finishing with cheese on top.
