Chicken Enchilada Crock Pot Meal

A delicious and simple chicken enchilada dish made in the crock pot, perfect for family dinners.

Ingredients

  • 2 cups cooked, shredded chicken
  • 1 can enchilada sauce
  • 1 cup black beans
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 2 cups shredded cheese
  • 8 small flour tortillas

Instructions

  1. In a large bowl, combine chicken, enchilada sauce, black beans, corn, diced tomatoes, cumin, and chili powder.
  2. Layer the bottom of the crock pot with tortillas, followed by the chicken mixture and a sprinkle of cheese.
  3. Repeat the layers until all ingredients are used, finishing with cheese on top.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Once done, let cool for a few minutes before serving.

Notes

  • Serve with sour cream or guacamole for added flavor.
  • For a spicier kick, add jalapeños or hot sauce to the mix.
