  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, chilled and cubed
  • 2/3 cup milk
  • 4 cups fresh strawberries, sliced
  • 1/4 cup sugar (for strawberries)
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, combine flour, baking powder, salt, and sugar.
  3. Cut in the butter until the mixture resembles coarse crumbs.
  4. Stir in milk until just combined.
  5. Turn the dough onto a floured surface and gently knead.
  6. Roll out to about 1 inch thick and cut into rounds.
  7. Place rounds on a baking sheet and bake for 15-20 minutes.
  8. In a separate bowl, mix strawberries with sugar and let sit for 30 minutes.
  9. Whip heavy cream with powdered sugar until soft peaks form.
  10. Assemble shortcakes by splitting them in half, layering strawberries and whipped cream in between.
