- 1 pound butternut squash
- 12 ounces pasta
- 4 tablespoons unsalted butter
- 6 fresh sage leaves
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- Preheat the oven to 400°F (200°C).
- Peel and cube the butternut squash, then toss it with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes.
- Cook the pasta according to the package instructions. Reserve 1 cup of pasta water, then drain.
- In a skillet, melt the butter over medium heat. Add the sage leaves and cook until the butter is golden brown and becomes fragrant.
- Add the roasted squash to the skillet and stir well. Add the cooked pasta and reserved pasta water, mixing to combine.
- Serve with grated Parmesan cheese on top.
