Brown Butter Sage Butternut Squash Pasta

A warm and comforting dish featuring the rich flavors of brown butter and sage, perfectly paired with butternut squash and pasta.

  • 1 pound butternut squash
  • 12 ounces pasta
  • 4 tablespoons unsalted butter
  • 6 fresh sage leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the butternut squash, then toss it with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes.
  3. Cook the pasta according to the package instructions. Reserve 1 cup of pasta water, then drain.
  4. In a skillet, melt the butter over medium heat. Add the sage leaves and cook until the butter is golden brown and becomes fragrant.
  5. Add the roasted squash to the skillet and stir well. Add the cooked pasta and reserved pasta water, mixing to combine.
  6. Serve with grated Parmesan cheese on top.

Notes

  • For extra flavor, add some crushed red pepper flakes.
  • You can substitute the Parmesan with a vegan cheese for a dairy-free option.
