Best Weeknight Tomato Zucchini Pasta

A delicious and quick recipe for weeknight dinners combining fresh tomatoes, zucchini, and turkey bacon.

  • 8 ounces pasta
  • 1 tablespoon olive oil
  • 4 strips turkey bacon, chopped
  • 2 zucchinis, sliced
  • 2 cups cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup fresh basil, chopped
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chopped turkey bacon and cook until crispy.
  3. Add sliced zucchini and cook for about 5 minutes until tender.
  4. Add cherry tomatoes and garlic, seasoning with salt, pepper, and red pepper flakes. Cook for another 3-4 minutes.
  5. Toss in the cooked pasta and mix in fresh basil.
  6. Serve topped with Parmesan cheese.

Notes

  • Feel free to substitute regular bacon for turkey bacon if desired.
  • Can be served with a side salad for a complete meal.
