The Best Vegan Queso

Ingredients

  • 1 cup vegetable broth
  • 1 tablespoon nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon lime juice
  • Salt to taste

Instructions

  1. Soak cashews in water for at least 2 hours. Drain and rinse.
  2. In a blender, combine soaked cashews, vegetable broth, nutritional yeast, garlic powder, onion powder, chili powder, cayenne pepper, lime juice, and salt. Blend until smooth.
  3. Transfer the mixture to a saucepan and heat over medium heat, stirring continuously until warmed through.
