Best Tuscan White Bean Soup

A hearty and nutritious soup featuring delicious Tuscan flavors, enriched with turkey bacon and chicken ham.

Ingredients

  • 1 cup white beans
  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp rosemary
  • 2 cups kale, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop.
  2. Add onions and garlic to the pot, sautéing until softened.
  3. Stir in chicken ham, cooked turkey bacon, and seasonings.
  4. Add white beans and vegetable broth, bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Add kale and cook for an additional 5 minutes until wilted.
  7. Season with salt and pepper before serving.

Notes

  • For a vegetarian version, omit turkey bacon and ham.
  • Feel free to add more vegetables like carrots and celery.
