  • 1 cup feta cheese, crumbled
  • 1 cup cucumbers, diced
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Wrap beets in aluminum foil and roast in the preheated oven for 45 minutes, or until tender.
  3. Allow beets to cool, then peel and dice them.
  4. In a large bowl, combine diced beets, cucumbers, feta cheese, and dill.
  5. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  6. Pour dressing over the salad and toss gently to combine.
