  • 3 ripe bananas
  • 1/4 cup melted butter
  • 1 cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, mash the bananas and stir in the melted butter.
  3. Add sugar, egg, and vanilla to the banana mixture and mix well.
  4. Sprinkle baking soda and salt over the mixture, and mix in.
  5. Stir in flour until just incorporated.
  6. Fold in the walnuts.
  7. Pour the batter into greased muffin tins.
  8. Bake for 20-25 minutes, or until a toothpick comes out clean.
  9. Cool on a wire rack.

Notes

  • For added flavor, you can use chocolate chips.
  • Make sure not to overmix the batter for lighter muffins.
