  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, combine flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together melted butter, buttermilk, eggs, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and mix until just combined. Do not overmix.
  5. Gently fold in the blueberries.
  6. Fill each muffin cup about 3/4 full with batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let cool in the pan for 5 minutes before transferring to a wire rack.

Notes

  • For extra height, let the batter rest for 10 minutes before baking.
  • Feel free to add a sprinkle of sugar on top before baking for a crunchy topping.
