Baked Italian Zucchini Parmesan

This Baked Italian Zucchini Parmesan is a deliciously cheesy, guilt-free dish that showcases the flavors of Italy while keeping it healthy.

Ingredients

  • 2 medium zucchinis
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis into thin rounds and layer half in a baking dish.
  3. Spread half of the marinara sauce over the zucchini.
  4. Sprinkle half of the mozzarella and Parmesan cheese over the sauce.
  5. Season with half of the Italian seasoning, garlic powder, salt, and pepper.
  6. Repeat the layering with the remaining zucchini, sauce, and cheeses.
  7. Bake for 25-30 minutes until the cheese is bubbly and golden.
  8. Let it cool for a few minutes before serving.
