  • 1 medium red onion, thinly sliced
  • 1 cup water
  • 1/2 cup white vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 4 slices of your favorite bread
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Red pepper flakes for garnish

Instructions

  1. To make the pickled onions, combine water, vinegar, sugar, and salt in a small saucepan over medium heat. Stir until the sugar and salt dissolve.
  2. Place the sliced red onions in a jar and pour the hot vinegar mixture over the onions. Let them sit for at least 30 minutes.
  3. Toast the slices of bread until golden brown.
  4. While the bread is toasting, scoop the avocado flesh into a bowl and mash it with a fork. Season with salt and pepper to taste.
  5. Spread the mashed avocado evenly over each slice of toasted bread.
  6. Top with pickled red onions and a sprinkle of red pepper flakes.
