  • 1/2 cup unsalted butter, softened

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 cups diced apples
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1/2 teaspoon ground nutmeg
  • 1/4 cup all-purpose flour (for crumb topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, cream together the butter and sugars until fluffy.
  4. Add the eggs and vanilla, mixing until well combined.
  5. Stir in the sour cream and the dry ingredients until just combined.
  6. Fold in the diced apples gently.
  7. In a separate bowl, combine the brown sugar, oats, flour, and nutmeg for the topping.
  8. Sprinkle the crumb topping over the muffin batter.
  9. Divide the batter evenly among the muffin cups.
  10. Bake for 20-25 minutes or until a toothpick comes out clean.
  11. Allow to cool before serving.

Notes

  • For a sweeter muffin, increase the sugar.
