15-Minute Creamy Mushroom Udon

  • 200 grams udon noodles
  • 250 grams mushrooms, sliced
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Cook udon noodles according to package instructions.
  2. In a pan, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add sliced mushrooms and cook until they are soft.
  4. Pour in vegetable broth and bring to a simmer.
  5. Stir in heavy cream and soy sauce, mixing well.
  6. Dissolve cornstarch in a bit of cold water and add to the sauce to thicken.
  7. Add cooked udon noodles to the pan and mix until coated.
  8. Season with salt and pepper, then garnish with chopped green onions before serving.
